Revolutionary Vegan Salmon Fillet Produced with 3D Printing Technology

Revo Foods, an Austrian start-up specializing in producing vegan meat and fish substitutes using 3D printing technology, has developed a vegan salmon fillet. The company’s vegan smoked salmon and tuna spread are already available in many supermarkets across Europe. The new vegan salmon fillet, called “The Filet,” is also produced using a 3D printer. According to Revo Foods, it can save up to 80% of CO2 emissions and 95% of freshwater compared to wild and farmed salmon. The vegan salmon fillet is a more sustainable alternative to real fish, with the same calorie and fat content but a significantly lower protein content of 9%, compared to 18% in real salmon.

The vegan salmon fillet is made from mycoproteins, which are derived from fungi. An innovative 3D extrusion technology creates a precise replica of the fish fiber structure from these juicy plant fibers. The corresponding color is achieved by adding dyes. The vegan salmon fillet is already available in REWE and BILLA supermarkets in Austria since September 14, 2023, at a cost of €6.99 for 130 grams. Robin Simsa, CEO of Revo Foods, plans to develop more vegan alternatives to seafood with his team of around 40 scientists and engineers. He believes that the technology can also be used for many other foods.
